María del Carmen Díaz Mancilla is a retired track and field athlete from Mexico, best known for winning the gold medal in the women's marathon at the 1987 Pan American Games in Indianapolis, United States. She competed at the 1996 Summer Olympics in Atlanta, Georgia, where she finished in 33rd place in the women's marathon event.
